I can’t speak for OVH specifically but I’ve recently been moving more and more jobs from AWS to my own hardware. I bought a couple of servers with older hardware (DDR4) and they’re way faster than what I was paying quite a lot of money for from AWS. The craziest part is that they pay for themselves after only two months. I wish I’d done it years ago.
So if buying hardware makes sense, go for it over renting a server. You only pay the memory tax one time.

The server/hardware is not the tricky part… networking and keeping it running 24/7 efficiently is..
Where do your two servers run from?
I'm out of the loop but colocation used to be a thing, surely that must still exist ?
